An easy way to increase Defense is to get in a fist fight and just do a Perfect Dodge vs. your opponent's blows. If you get hit, usually it only decreases your Stamina a bit. This is also a great way to improve and practice your tactics and ability as the gamer. I used to get beat a lot, now I am adept at dodging blows. The next step after you get your Defense up to around level 12 is to do a combo of Perfect Dodge followed by a single blow, then learn to do Chain Strikes.
